Haloozh

Haloozh is the Circassian pastry of Kfar Kama: thin dough folded around Circassian cheese, fried until it puffs up and turns gold, eaten hot. In the village it is served with tea, sometimes with honey.

What is haloozh made of?

Thin dough of flour, water and salt, and village Circassian cheese: a white, semi-firm, lightly salted cheese that melts inside while it fries.

How is it different from borek?

Haloozh is fried rather than baked, the dough is much thinner, and the filling is Circassian cheese. It comes out puffed and crisp, and you eat it hot.

What do you serve it with?

In Kfar Kama with tea, sometimes with honey. It also works next to a salad or yoghurt.

Can I reheat it?

Yes, in a dry pan or a hot toaster oven for a few minutes, until the dough is crisp again. A microwave makes it soft.

How do I order?

On WhatsApp. Tell us what you are celebrating and when, and we confirm. For a cake, three days is a good beginning; for a large order or a holiday, a week.
